What is a Masticating Juicer?

Basically, there are two types of juice machines on the market today, Centrifugal and Masticating Juicer Machines.

Centrifugal means moving or directed away from a center or axis.

A Centrifugal Jucentrifugal juicericer is the type most people know, and is the most common type of juicer, the one you see on TV or in Stores.  It consists typically of a spinning metal disk filled with sharp blades that cut up the fruits and veggies to extra the juice.  A centrifugal juicer spins at very high speeds, the vegetables are ground to a pulp.  The juice comes from the spinning motion of the pulp.  The juice then goes right into a bowl.  The clean up of this type of juicer is difficult and time consuming.  Centrifugal Juicers tend to be more noisy, due to the spinning speed.

 

Masticating means to chew, to grind or knead into a pulp.

The masticating juicer or single gear juicer which it is sometimes called, extracts juice from vegetables and fruits through the efficient action of a single auger.  Masticating juicers are credited with extracting juices at slower speeds that enable the juicer to masticating juicerproduce more efficiently with a higher nutrient content. The auger of the masticating juicer breaks down the walls of the plant cells through a grinding motion then squeezes the juice by crushing the produce against a screen.  The lower speed also minimizes oxidation which is known to damage or destroy enzymes contained in the juice.  Also known as single gear or wheat-grass juicers, masticating juicers are designed specially to juice leafy greens and wheat-grass and some mastication juicers double as food processors. A masticating juicer tends to be a lot more quiet, less messy and easier to clean.  One significant benefit of a masticating juicer is that it requires less vegetables, in many situations, to create more juice. As a result, you spend less on vegetables than you would with a centrifugal juicer.

Most Centrifugal Juicers process at a speed of 1,650 to 16,000 RPM, destroying many healthy enzymes and causing juice to degrade shortly after being extracted. Masticating Juicer will process at a Low Speed somewhere around 80 RPM, preventing oxidation and allowing juice to be stored for up to 72 hours without degradation.

Your teeth are an excellent example of mastication in action. Your teeth chew and grind food.  After you swallow, the food then goes to your digestive system which, through the process of digestion, begins to extract the juice from the food you eat.
Much in the same way, a masticating juicer grinds vegetables and literally squishes out the juice.  Since a masticating juicer works at low speeds and with no spinning action, it tends to juice many vegetables more efficiently.

Comparison
The difference between a centrifugal juicer and a masticating juicer is like night and day. Centrifugal juicers work at high speeds, tend to be noisy and while a centrifugal juicer may be able to juice the rind of a pineapple more efficiently, in most situations, the low speed action of a masticating juicer allows you to juice more vegetables with greater efficiency.  Some say the high speed action of a centrifugal juicer produces too much heat which then can damage or possibly kill the enzymes in the juice. Either way, One thing is for sure, a masticating juicer definitely does not create the friction that a centrifugal juicer creates.

Centrifugal juicers use cutting blades that are at the bottom of the container. The blade is spinning fast so juicer shreds its content with force and speed. The juicer produced by cutting is then pushed through holes in the bottom of the basket and goes through a spout. Pulp is sometimes tossed aside and sometimes goes with the juicer, depending on what you like. The extraction process of centrifugal juicer creates more oxygen and the life of juicer it produce is shorter than the life of masticating juicer product.

It’s also worth noting that a masticating juicer is much more versatile, in many regards, compared to a centrifugal juicer. Since a masticating juicer squeeze the items you put into it, you can also use a masticating juicer to make baby food, fresh pasta, grind meat, pet foods and to make nut butter.

Here is couple of tips that may be helpful to first time juicers. Use stainless steel containers to hold your juices for a few days.  Also use thick glass or BPA free 16 oz bottles for juicing on the go. Only buy veggies and fruit you’ll juice within 3 days or so.  You may make more trips to the market but a fresher product you have.  Happy juicing!
